Recipe of the Week – Sheet Pan Salmon Dinner
Let me tell you something about these trendy sheet pan dinners – NO DISHES. Other than the plate I ate this meal on, I did not use anything but one sheet pan that I covered in tin foil. This recipe I found on The Seasoned Mom was easy to throw together and had minimal ingredients, which as you all know – I love! Other than the fact that I probably won’t make another sheet pan dinner until the fall (oven in the summer, rookie mistake!) this recipe is a keeper.
Ingredients
- 2 sweet potatoes, peeled and cut into 1-inch cubes (I used one big sweet potato)
- 2 tablespoons olive oil, plus more for drizzling
- 12 ounces broccoli florets
- 4 salmon fillets, about 4-6 ounces each
- ¼ cup maple syrup (I ended up forgetting maple syrup at the store so I used honey instead! Worked great.)
- 2 tablespoons Dijon mustard
- Salt and pepper
First up, choppy choppy. I’ve learned the hard way, more than once, that everything needs to be similar size and shape or else it doesn’t cook evenly. Also! Did you know that if you crowd too many veggies on a pan when you want to roast them, the veggies end up steaming themselves? Which is basically soggy veggies. Yuck. So – two lessons I’ve learned when roasting vegetables – cut everything into a similar size and shape and make sure everyone has enough room on the pan!
My oven bakes super hot so I set the degrees to 375 and roasted the veggies for about 12 minutes.
Once the sweet potatoes and broccoli were just shy of done, I added the salmon with the honey and dijon mixture, cranked the oven to broil and put the pan back in for another 6 minutes. That just happened to be the perfect amount of time for the salmon to be cooked, the broccoli to get the right amount of crispy, and the sweet potatoes to be soft (but not soggy!). Honestly, I’m the worst at cooking fish so I just followed the directions from the recipe and everything turned out great!
This meal was so easy and the clean up is even easier, making it a win-win. I feel like this recipe could be made with all different vegetables or proteins – choose your own adventure style.
